Scallops

The King and Queen scallops that occur wild off the coast of Scotland are a highly prized delicacy.

However, demand has put pressure on wild stocks, and so aquaculturalists have learned to harness the natural life cycles of these bivalves to produce 'farmed' scallops.

Natural spat is collected from the wild and ongrown in net baskets suspended in the sea. The scallops are regularly checked to ensure optimum growth conditions are maintained.

At two years old, Queen scallops are ready for market but King scallops are generally placed on the seabed and ongrown for a further two to three years. Harvesting and husbandry is then carried out by divers.

King scallops are sold live in-shell and as unsoaked meats while Queen scallops are available live in-shell and as a fresh half-shell product. Did you know that King and Queen Scallops are farmed using many different systems, but all spat is collected from the wild?
